We all love a good neighborhood bar. Somewhere cozy, familiar, not too fancy, where you can grab a drink, celebrate after work, or watch football on the telly. When it comes to food, though, most neighborhood pubs in Amsterdam don’t offer much beyond the standard bitterballen and cubes of oude kaas with mustard.
That’s why it’s great news that The Beef Chief, creator of Amsterdam’s famous Kimchi burger, has taken up residence at Cafe Tapmarin, a typically Amsterdam bar in the heart of de Pijp.
Since it opened its doors in 1970, Tapmarin has been one of the Pijp’s best-loved neighborhood hangouts. Now it offers The Beef Chief’s signature Big Fat Juicy burgers from 17.00 to 21.00 daily. The formula is simple: for just €10, you get a delicious fresh Big Fat Juicy burger with a side of triple-cooked fries. Can you hear the hungry drinkers rejoicing, or is it just me?
Popular on the festival and weekend market circuit, The Beef Chief is best known for The Kimchief, a 100% beef patty topped with kimchi, farm cheese, spring onion, spicy mayo and sriracha on a toasted bun. This famous burger wasn’t available the night Miguel (from Mattresses of Amsterdam) and I went to get our burgers and beers, so we got better acquainted with The Beef Chief’s other soldiers.
I ordered a classic cheeseburger while Miguel went for bestseller The Patriot, which is topped with bacon, cheddar cheese, chipotle ketchup, yellow mustard, pickles and lettuce on a toasted bun. Generous helpings of triple-cooked fries plus beers on the side completed our table.
There’s a reason The Beef Chief is a festival favorite, and it’s because they do a truly solid beef burger—thick, juicy, and flavorful with a touch of char-grilled smokiness. They could stand to go easy on the salt, but this minor flaw is easily overlooked. The brioche bun is a big plus—soft and fluffy, but holds together surprisingly well (burger dribbling all over your shirt is not a good look on anyone).
If you really enjoy the taste of meat, you might prefer a classic burger or cheeseburger to let the flavor of the beef shine through. Hardcore carnivores can go for a Double Trouble, which gets you an extra beef patty. If you’re like me and you want your flavors big and bold, then by all means pile it on! The Patriot (or the original Kimchief, if available) with all its bacony goodness, is the burger for you.
Now, the sides. The Beef Chief’s triple-cooked fries are flavored with a homemade spice mix and white barbecue sauce. Like the burger, the Patriot fries come with bacon and chipotle ketchup, while the Redneck fries come with crispy fried onions. For me, the Redneck was the clear winner—with the bacon, the Patriot comes out a bit too salty. The generous portions left us both stuffed and happy; for €10, the whole deal is pretty good value for money.
